Raspberry Rum Praline

Spicy Rum Raspberry

A touch of Cayenne Pepper enhances the Spiced Rum with the purée of Organic Raspberries and the thick 60%cacao.

Dark ganache with Tanqueray, Orange and Peychaud Bitters, one of my first recipe, just when I got that nice diamnod shape I knew I wanted to provide something more refine, more delicate, but also much wilder than traditional pralines.

Absinthe, Orange Blossom in a luscious buttercream and with a dark chocolate bottom for an extra-kick, created right here in collaboration with your bartender, to first satisfy the need for a white praline, and also my love of absinthe!
